Per 8 porzioni
225gr farina manitoba
3 cucchiaini lievito (io uso cremor tartaro lo trovate in negozi bio)
75gr olio di girasole
3 banane mature
100gr zucchero di canna
50gr gocce di cioccolato
1 cucchiaio cannella
Con una forchetta schiacciate le banane in una ciotola, aggiungete lo zucchero e l’olio. Mescolate bene. Aggiungete la farina setacciata, il lievito, la cannella e le gocce di cioccolato (volendo potete usare altra frutta secca oppure uvetta).
Mescolate bene il composto se troppo duro aggiungete un cucchiaio di latte vegetale.Mettete in uno stampo da cake e cuocete a 200°C in forno già caldo per 20′. Controllate poi la superficie, se è già dorata coprite con alluminio e continuate la cottura per 40-45′ ancora a 150°C
Delizioso appena sfornato, il giorno dopo provate a scaldarlo nel tostapane o a farci merenda davanti ad una tazza di latte o un thè caldo, attenzione crea dipendenza!

OMG I love it so much, what will happen during your day is so connected to the way you get up so starting your routine with a good croissant, your granola yoghurt or your cappuccino is the best way to attract positive karma I think. I truly don’t understand those who are alwas in a hurry (yes man I’m also talking ’bout you darling) and simply drink an espresso on the way to the office…
I love so much to sit around my kitchen table – ok not here in Milan where I don’t have a real kitchen – drink my hot american coffee, read the newspaper and eat something delicious.
The cake I baked yesterday is th classic banana bread but this one is simply delicious, moist, low cost and it’s vegan so you save money and calories: no milk, no eggs, no butter and it’s great so don’t feel guilty for having two slices of it in the morning!
For 8 servings:
225gr plain flour
3 tsp baking powder
100gr brown sugar
75gr sunflower oil
50gr dark chocolate chips
3 ripe bananas
1 tsp cinnamon
Preheat oven to 200°C. In a bowl smash the bananas with a fork, add sugar and the sunflower oil. Combine well. Then add flour, baking powder, cinnamon and the chocolate chips, mix well.
Bake in a greased loaf tin for 20′ at 200°C then cover it with foil and bake for 40-45′ more, check with a toothpick if it’s ready.
Enjoy it with your coffee in the morning or with a cup of tea for your afternoon break! 🙂
